Traditional King Cake

I like this simple traditional king cake. No weird fillings, no weird icings. Just yummy sugar.

  • What you need for the cake:
    • 1 stick butter
    • 2/3 cup, fat-free evaporated milk
    • 1/3 cup + 2 tablespoons sugar,divided
    • 2 teaspoons salt
    • 2 packages dry yeast
    • 1/3 cup warm water
    • 4 eggs
    • 1 tablespoon grated lemon rind
    • 2 tablespoons grated orange rind
    • 6 cups bread flour
  • What you need for the filling and toppings:
    • 1/2 cup packed dark brown sugar
    • 1 3/4 cups granulated sugar (divided)
    • 1 tablespoon cinnamon
    • 1 stick butter, melted
    • 1 egg. beaten
    • food coloring
  • 2 plastic babies (you can find these as party favors in the baby shower section of a party supply)
    Steps to make the bread:
  1. Melt together stick of butter, milk, 1/3 cup sugar and salt. Remove from heat and let cool until just slightly warm.
  2. In a large bowl, combine 2 tablespoons sugar, yeast and warm water. Let stand until foaming, about 5 or 10 minutes. Beat eggs into yeast. Then add milk mixture, and citrus rinds.
  3. Stir in flour, gradually, reserving about a cup of the flour for kneading.
  4. Knead dough until smooth, about 7 to 10 minutes. Place in large, greased bowl, turning to coat dough. Cover and let rise in a warm spot, until doubled in size, approximately 1.5 to 2 hours.
  5. Punch dough down, divide in half. Roll each half into a 15x30" rectangle.
  6. Brush dough with melted stick of butter. Cut each rectangle into 3 long strips. Combine brown sugar, 3/4 cup granulated sugar, and cinnamon and spread over butter. Fold each strip and seal longwise.
  7. Braid three strips together, then form into a circle, for each loaf. Put each circle on a cookie sheet, cover with damp towel, and allow to rise again for an hour.

  8. Preheat oven to 350 degrees
  9. Divide remaining cup of sugar into thirds. Color each third (1 purple, 1 green, 1 gold).
  10. Brush the dough with the beaten egg. Then sprinkle the sugar in sections
  11. Bake for 23 minutes, exposed dough will be golden brown
  12. Remove from sheets and cool on wire racks. While still warm, place a baby in each cake from the bottom. Do NOT choke on the baby! Warn your guests!
