Slow Cooker Pork Chops and Gravy

This tried and true recipe is from cooking light. It is wonderful with mashed potatoes.

  • 4 to 6 thick pork chops
  • 1 tablespoon canola oil
  • 2 cups chicken broth
  • 1 tablespoon dry mustard
  • Up to 1 teaspoon salt (I generaly leave it out, use to taste)
  • 1/2 cup light type of cooking oil such as canola
  • 2 or 3 minced garlic toes
  • 2/3 cup flour
  1. Heat oil in skillet on med-high heat and brown both sides of pork chops.
  2. Place pork chops in a large slow-cooker (wider and shallower is better than tall and deep). Combine broth and seasonings - whisk until well-blended. Pour over meat.
  3. Cover and cook on LOW for 6 hours, or until chops are tender (they will dry out if not adequately covered in broth).
  4. Remove chops from liquid, and keep covered and warm. Blend some of the cooking liquid into the flour until thinned. Return combined flour and broth to crock pot and turn heat up to HIGH. Cook uncovered until mixture thickens, about 10 to 15 minutes.
